Sweet potato noodles boost rural vitalization in Luocheng

Jiangkou village, Huangjin town in Luocheng Mulao autonomous county, ushered in the "golden season" of sweet potato noodle production on Dec 7. Locals rush to make sweet potato noodles to supply the market demand for the Spring Festival.

"The sweet potato noodle industry is a traditionally advantageous industry in Jiangkou village, because it has a history of making sweet potato noodles by hand for more than 100 years," said He Bingjun, a 55-year-old villager.

He stated that the process of making handmade sweet potato noodles is complicated, and must go through various stages of selection, washing, pulping, filtering, steaming, semi-drying, shredding, drying and so on. Jiangkou noodles stand out from other brands because of their pure handmade steaming process, which turn the noodles amber in color. The noodles are also delicious, easy to cook, rich nutrition and easy to store.

In recent years, Huangjin town has been committed to promoting the "Jiangkou sweet potato noodles" brand. They use the "cooperative + base + factory + farmers + orders" model to produce more sweet potatoes  and to improve sweet potato noodle production.

In 2021, Jiangkou produced more than 75,000 kilograms of handmade sweet potato noodles, with a value of more than 2.5 million yuan ($358,000). This success led to the high-quality development of this specialized industry.
